As we locate coffees that overwhelm us with their flavor we will purchase them and offer them here for you. Practices (our standards for raising or making our products) We continually search the world in an effort to secure the most flavorful and unique coffees available. Each sample I receive is subjected to rigorous cupping (testing) to assess it's qualities and to determine if it is up to my standards and the flavor profile I am looking for in each coffee. Coffee is a crop, and as such is subject to Mother Nature and many other economic and processing variables. A coffee which is great one year may not even be around the next or may not possess the characteristics that set it apart the previous year. Thus each harvest is a new challenge, sorting through dozens of the very best samples to determine which ones we will offer our customers for that year. Then comes the process of defining the degree of roast for each Coffee, and the roasting profile that brings out it\'s finest aromas and flavors. Additional Information Cacao Nibs: Cocoa (cacao) nibs are the purest, most elemental form of chocolate. Tiny nuggets of perfectly roasted cocoa beans separated from their husk and broken into small bits- they are the essence of Chocolate. Nibs can be used to add crunchiness and subtle chocolate flavor to baked goods and savory dishes. They make a great substitute for toasted nuts or chocolate chips in cereals, granola and cookies - without added sweetness. You can also process them further (using your Champion food processor) to make your own unsweetened baking chocolate or if you are adventurous- your own chocolate bars. Good, pure chocolate is full of flavonoids which are some of the most powerful antioxidants on earth. Ounce for ounce, chocolate is one of the richest food sources of these crucial substances, with approximately twice as many antioxidants as red wine and three times as many as green tea. It supplies meaningful amounts of potassium, zinc, magnesium and iron, and has been found to promote healthy blood pressure and cholesterol levels. Here are a few ideas for using cocoa nibs: · Grind some nibs in with your morning coffee beans · Sprinkle nibs, as you would toasted nuts, on a salad · Use them in your favorite chocolate chip cookie recipe · Sprinkle over Ice Cream · Use them in Granola or Cereal. I first ran across Cacao and the process of making chocolate while visiting coffee plantations in Oaxaca, Mexico several years back. After seeing Cacao Trees loaded with pods on a Coffee Plantation high in the Pluma Mountains, my friend’s grandmother made some chocolate for me, in the old Aztec style handed down for generations. Toasting the Cacao beans over the fire, husking them by hand, then using a stone metate to process the beans into a rough paste and eventually into a bar of amazing chocolate, laced with Cinnamon and other subtle spices. It was incredibly labor intensive and time consuming- a real labor of love and I felt privileged and honored to receive it as a gift. There was no comparison between that hand-made chocolate and even the locally manufactured bars one could buy in the open markets of Oaxaca. I wished I could have followed her every step of the way, learned to make chocolate the way her mother had taught her. She was the last one in the Village who cared about making Chocolate the old way, the only one left with the knowledge and desire to spend days crafting the delicacy. Since that day I have been fascinated by Cocoa beans and process of creating chocolate. Admittedly I am not anywhere near the level of expertise that my friends Grandmother was! But fortunately Cocoa beans are one of Mother Nature’s foods that don’t require a lot of meddling to enjoy. Sure we can process them further and use them in a myriad of different ways- but they are quite delicious and extremely healthy just as they are. As with all unprocessed foods they may take a little getting used to. This is not chocolate; it is the seed that chocolate is made from and is more like eating a toasted nut than a chocolate bar. Of course no toasted nut has ever tasted like this! |

The smooth fullness of an Island coffee blended with the snappy acidity and richness of Central and South American meld together to create a cup that will wake you up and keep you moving all morning! During the civil war families were forced to flee, farms and houses were burned and innocent bystanders were killed. The war only ended after the tragic tsunami of 2004 where entire villages of people disappeared along the coast of Sumatra and the lives of over 130,000 Indonesians were lost. After the implications of the tsunami, the Indonesian Government and Acehnese rebels agreed to disagree and laid down their arms. Families returned to their destroyed properties as peace spread across their land. Permata Gayo’s founding members started the co-op in hopes of banding together to apply for assistance from the government and NGO’s. The forms were filled out and filed, time went by but in their specific case help never came. The farmers decided they could move towards prosperity faster on their own and started working towards Organic and Fair Trade certification. In 2007 they earned Organic Certification and in 2008 their coffee became Fair Trade Certified.
