We raise Bard Plymouth Rocks, Partridge rocks, Ameraccanas, Brahmas, Red Leghorns, Welsummers and Turken Chickens. Our Nigerian Dwarf and Saanen Goats are for milking and our Spanish Boar goats are for meat. Our other animals include Gloucestershire Old Spot pigs, Dexter and Spanish Longhorn cattle and Southdown/Friesian sheep. All our animal are on a free range rotational grazing program. We feed only pure wholesome all natural feeds when needed, usually grains we have grown ourselves. We use only Herbs for medications. Never underestimate the power of herbs. We do not use any pesticides or chemicals, nor do we use any hormones or antibiotics. We do not use anything we would not give ourselves. We are a start to finish farm. By that we mean, we raise all our animals from incubation to slaughter. We have a large incubator to raise our own chickens from our flock. We raise our own pigs, beef, lamb and goats from our own stock. This way we know exactly what goes into them from the beginning. On the other hand this limits the amount of product we can produce. We use our chicken manure to fertilize the pastures. Rotational grazing our livestock helps keep the animals healthy and the soil nourished. Using this program we drastically cut down on the use of fossil fuels. Bailey, Skylar & Kevin have been working on their Free-Range goats, If you have never tried goat meat, you really should. Our egg cartons are exact replicas of the original egg carton first made. They are 3 eggs wide and 4 eggs long made from 100% recycled paper.
Free-Range eggs come from Free-Range chickens, our chickens are free to roam the entire farm from dusk till dawn. We never feed or medicate our chickens with anything we would not give ourselves. If you desire one of the most flavorful, juiciest roasts on the market, look no further than the chuck roast.
The chuck roast is quite versatile. Typically an economical meat, it is used for pot roast, shredded beef or mouth-watering beef sandwiches.
4 to 5 lb. chuck roast (serves 4 to 6) ~ 1 cup flour (for dredging) ~ 1 small onion (quartered) ~ Favorite meat seasonings ~ 2 to 3 tbsp. of oil ~ 1 cup of water or beef broth ~ Optional: carrots, potatoes and onion (for pot roast)
1/ Season your chuck roast. Select personal favorites from herbs to rubs. For additional flare try liquid smoke, mesquite and/or Worcestershire sauce. Let liquid seasoning sit on the meat for several minutes. 2/ Light browning is key to a great pot roast. Dredge the chuck roast in flour and brown evenly on medium heat to lock in the juices and flavors. A cast iron or heavy skillet seasoned with a light coating of oil or beef fat (to prevent sticking) is preferred. 3/ Add chuck roast, quartered onions for flavor and about 1 cup of liquid (water or low-sodium beef broth) to a crock pot or roasting pan and cover. Slow cook the roast on low in the crock pot 5 to 7 hours until very tender or in the oven at 325 degrees until done. Plan on 40 to 60 minutes per pound in the oven. 4/ For oven cooking: Use a covered roast pan or place the chuck roast atop cleaned carrots (used as a natural grate) cut to fit the pan. Cover with foil.For pot roast, discard overcooked vegetables and replace again when potatoes are added,45 minutes to an hour before the roast is finished. 5/ Allow the chuck roast to settle 10 to 15 minutes before serving. Our CERTIFIED NATURALLY GROWN whole calf Longhorn ground beef is some of the best you can buy. Longhorn has been proven to make wonderful ground beef, but less desirable as cuts. Our personal preference is to have juicy tender cuts of meat and a lean ground for burgers or cooked ground for casseroles and other meals.
You know the layer of fat on your hand after making hamburger patties from hamburger purchased at the grocery store? With longhorn meat, there is NO layer of fat to be scraped off your hands. However, they do have enough fat in them to stick together and not fall apart in the pan. Longhorn burgers also stay about the same size as they were when you put them in the pan. Very little shrinkage!
