About Us
My husband came from a farming family, I came from Boston. We married and he has taught me to love of the land. And now, here I am, farming away. We have grown into a four season farming operation, with 10 hoop houses. We practice low input farming and mainly fertilize with natural products and green manures. We have an orchard of 9000 trees in Stratford that we planted in 2000. We also have some apple trees, apricots, plums, and pear trees. We had the good people of OSU come and teach us about how to best handle all these very sensitive fruits. They sent us Dr. Mannis. Post harvest we treat them by hydro chilling them. We then dry and sort them by grade. The peaches are sent to a co packer in Tahlequah for processing. Each jars has over 1 lb of our wonderful peaches in it. We've had great reviews of our product and many happy return customers. This will be our forth year to have vegetables in production. We have a 24 acre plot that the USDA has certified as organic. We will be sure to let you know which vegetables are from that area. We are planning many great offerings from both of our vegetable plots this year and are very happy to have had some moisture. Practices (our standards for raising or making our products)
We pick in the early morning and wash everything in chilled water with ice cubes to bring the field heat out of the crop. We then hand sort them into quality groupings. 1st, and 2nds. We plant extra to go to the Oklahoma City food bank, knowing that vegtables are an essential part of a good diet. We also take food into Food and Shelter for Friends in Norman.The cooks are so happy with FRESH food.

A great green to make pesto out of, or add to a salad.Arugula is a spicy little leaf, which some describe as bitter and others characterize as having a "peppery-mustardy" flavor. Because it is so potent on its own, it is often mixed with milder greens to produce a nice balanced salad. It can also be sautéed in olive oil. You can substitute most any green for arugula, but the closest matches are Belgian endive, escarole, and dandelion greens.
