We have Spinach and Lettuce! We have kept it covered and the days of sunshine did it's work! About Us Mark and I are working on the second half of our lives and we are proof that it can be the best time of your life! Mark is a Petroleum Engineer and graduated from OSU but he has farmed for over 30 years and farming helped pay for his education. He says that Dr. Motes and Dr. McGraw from OSU were instrumental in teaching him successful farming practices when he was a student there. I grew up in Kentucky and quit school at Western Ky University to be a flight attendant for Continental Airlines. Later after getting married, I was in the travel business for 22 years. I use to take people hunting and fishing in Ole Mexico and peacock bass fishing in Venezuela and Brazil. When I met Mark, I was working for Southwest Airlines and contemplating going to my 25th high school reunion so I was paying particular attention to anyone whose birth year was the same as mine. I broke the ice by asking him if he had been to his high school reunion, he hadn't and I ended up going to his instead of mine. We have been married over five years now. Due to some good luck, because Mark wasn't killed, but bad car accidents, Mark has to limit his physical activities, I have become the "Farmer". Insert Green Acres Music... This is because our cool season weather is ideal for growing the best spinach available anywhere in the world. If you have tried fresh homegrown spinach you know there is NO comparison to canned or processed. Our spinach taste great, is uniquely healthy and very easy to prepare. In fact it is so good and easy that all you have to do to enjoy it is simply fill a pan with water about half full then place the spinach in the water and bring it to a boil, drain and serve plain or with your favorite seasonings. Everyone should try it this way at least once then after discovering the wonderful fulfilling flavor and the smile in your stomach you will begin to realize the many possibilities of creating world class dishes in your own kitchen. Here is a recipe for one of those dishes, Stir-fried Spinach: Wash your spinach in a colander, pour 1/4 cup olive oil into large pot over medium heat or enough oil to grease bottom of pot, start adding damp spinach to pot with a little salt and pepper, making layers, add a little more olive oil, more Spinach, salt and pepper, then toss as if you were making a salad. Put on lid and steam for approx 5 minutes, stir again. It cooks very fast this way because it is fresh from the garden. You will not believe how truly great this taste.
