Doug became a "fungus farmer" out of his passion for mushrooms and his desire to grow something that was safe for the environment, had low technological requirements, and could benefit people. Thus he entered the rewarding trade of mushroom farming. Shiitakes, with potent nutritional and health benefits, fit the description perfectly. He and his wife Sandra formed Lost Creek Mushroom Farm in 1992. In 1998, with Cindy and Daryl Bailey of DC3 Farm in Bristow, they started Redbud Gourmet to manufacture and distribute products using their shiitakes. Browse through our Products for Sale Ingredients Shiitake log kits contain: + An all-natural,ready-to-fruit hardwood log inoculated with high quality shiitake spawn. + Grows fresh shiitake mushrooms every 2 months for 3 to 4 years. Intense and unique! 1.25 oz size makes 1-1/2 to 2 cups, 2.5 oz size makes 3-4 cups. The mix can be served as a dip, sauce, spread, salad dressing or seasoning. Practices (our standards for raising or making our products) The very best shiitakes are grown on all-natural hardwood logs without chemicals or additives of any kind. Log-grown mushrooms are prized for their superior flavor and texture, long shelf life, and potent nutritional and medicinal benefits. Most shiitakes on the grocery shelf are grown on sawdust blocks and do not have the pungent flavor, meaty texture, or health and nutritional potency of shiitakes grown on natural logs. Our mushrooms are all natural, watered with tested well water, and are fruited naturally or by soaking. Log-grown shiitakes have 18% protein by mass and are high in calcium, niacin, B1, B2, iron and phosphorus. Grow-your-own shiitake mushroom logs are all-natural hardwood logs filled with shiitake spawn and ready to grow mushrooms. They will produce every two months for three to four years. Using two logs will produce every month by alternating the producing log. Logs require regular soaking in non-chlorinated water, room light and room temperatures. "Shocking" the log in ice water triggers the production cycle and mushrooms are ready to harvest in 6-10 days. Harvests run 2-8 oz, depending on the size of the log and moisture content. Excluding 'Shroomies, logs kits are guaranteed to grow and include instructions and a booklet with eight recipes. 'Shroomies are cut from our large logs, but they are not covered by our guarantee because of shipping costs.
