We were fortunate to have bad soil, which lavender prefers, and an abundance of sunlight, necessary for the sun-loving Mediterranean herb. That fall and the following spring, we planted about an acre of lavender, not quite sure what we would do with it all come harvest. We became members of the Cherry Street Farmer’s Market in Tulsa, and began selling lavender plants in 4 inch pots. Before long we had dried bundles to sell, and we watched as people approached our booth – some would say that they followed their noses from the parking lot to find us, and some would inhale deeply, pause for a moment, smile a ‘thank you’, and jostle in line at the busy Saturday morning market. We knew we had a good core crop – we just needed to do more with it. Denise is a fearless cook, and she drew upon those tendencies to begin creating a line of lavender products that we could produce ourselves on the farm, bring to market, and maybe even make a profit on. Lavender soaps were first, followed by shea butter, lip balm. I’ve been known to leave the dinner table, grab my camera, and run out to the field because I saw that the sunset was casting beautiful light on the lavender, and we’ve printed some of my photographs into notecards that we also sell. And one night, not intending to do product work at all, I threw an old lavender bundle on the fire in the woodstove that heats the farmhouse and was pleasantly surprised by a burst of fragrant smoke. We soon began packaging lavender logs. We’ve recently begun working with culinary lavender, thanks in large part to our friend Lisa Becklund, who owns and operates The Living Kitchen and offers farm table dinners in the summer months, one of which features lavender. The very fragrant lavender that people are most familiar with isn’t so good for cooking because it’s too strong – it can taste like a bar of lavender soap. There is a milder smelling but very pleasant tasting variety we grow called Munstead, which is generally considered to be the culinary variety. We offer lavender salt, sugar, and pepper, and are working on our own version of Herbs de Provence. We’ve gone from selling exclusively at the Cherry Street market to attending the large area herb festivals, regional craft festivals, and a few small events where we don’t make a lot of sales but which we just like being a part of. One of the best parts of our business is that we get to see everything through from beginning to end. We grow the crop, make the products, present them at markets, and meet the customer. We don’t want to get bigger in a way that would disrupt that facet of our business. But time and again we’ve been asked if we sell through the Oklahoma Food Co-op, and we’re pleased to report that yes, we do. (A bit of trivia -- we don't know what it is about Arkansas, but when we do shows in our neighbor state, we always sell out of the lavender ylang ylang.
