Happy February Coopers. There are still lots of fresh mushrooms popping up in our underground grow rooms. We are awaiting final paperwork on a grant that will help us build two above ground rooms which will nearly double our production, so look forward to even more mushroom goodness in the future. Here is a recipe for a delicious sauce that would be amazing on pasta or gnocchi.
Shiitake and Wine Sauce
1/4 lb Shiitake Mushrooms
2 tablespoons butter or earth balance
1/4 cup chopped onion
1/2 cup dry vermouth or dry white wine
1/2 cup heavy (whipping) cream
1/2 teaspoon chopped fresh tarragon or ¼ Teaspoon dried tarragon, crushed
1/8 teaspoon salt
1/8 teaspoon ground black pepper
Remove stems from Shiitake Mushrooms (use in stews, to flavor broths, etc.); slice caps; set aside. In a small saucepan melt butter. Add onion; cook and stir for 3 minutes. Add mushrooms; cook and stir until onion is tender, about 2 minutes. Stir in vermouth, cream, tarragon, salt and black pepper; bring to a boil; boil until sauce is reduced to 1 cup, 4 to 5 minutes, stirring occasionally. Serve over chicken, fish, veal, and vegetables or in baked potatoes.

Greetings from the Farm! We are so looking forward to spring! Trying to keep another batch of baby chicks warm in this weather has been a challenge. We just returned from a farming conference last week and have many new plans for the farm this coming season, with on farm sales, farm day activities, etc. If you would like to be kept informed about this, shoot us an e-mail and we will put your name on our mailing list.
The supply of 100% grass fed roasts and ground beef is good this month. We continue to offer our special on ground beef bundles. Stock up at this great price! We have some exceptional beef that will be ready for processing in a couple months for those of you who would like to reserve a 1/4 or 1/2 carcass and have it processed to your specs. E-mail for more info on this.
Our ground lamb and leg o' lamb is still available and has excellent mild flavor. The Dorper Lamb is a very meaty mild tasting animal bred especially for the exceptional meat.
We are offering pastured stewing hens this month. These make the best chicken and noodles known to man! They create a very flavorful nutritious broth for soups, etc.
The pastured broilers are also offered this month. We will not have a supply of them next month so best to stock up this month.

We are looking forward to meeting as many of you as possible at the next annual meeting (whenever and wherever that is.) We're not sure yet what we are going to serve, but I promise we'll have a tasty treat for you to try, especially if you've never had lamb.
This month, we are introducing a new product: lamb stock! You have probably used chicken stock in your cooking, which works great with chicken, turkey, and vegetable dishes. Lamb stock is not as heavy as beef broth, and can be used with beef, lamb, and veal to add flavor to soups, stews, and casseroles. We're selling this in 16 oz frozen packages. It's made with our grassfinished lamb soup bones by Earth Elements Market and Bakery, our copacker.
To help introduce our new product, here's a recipe we hope you'll enjoy. We like to make this when we're in a hurry for a quick meal after a long day. You can use meat that you've previously cooked, such as leftover roast. Or you can brown a pound of lamb sausage or ground meat or stew meat. If you are gluten intolerant, use arborio rice and make risotto instead of orzotto.
Orzotto
2 cups lamb stock
3 tablespoons olive oil
2 cloves garlic, minced
1/3 cup chopped onion (I like sweet onions, leek or shallots work great also)
1 cup orzo
1/2 cup white wine
Sea salt
1/2 cup grated Parmigiano-Reggiano or Pecorino Romano cheese
3/4 - 1 lb of beef, lamb, or veal (ground or diced into cubes)
1/2 bunch of spinach, kale, or other greens (use any amount you like)
In a small saucepan, heat the stock to a low simmer. Do the same with 2 cups of water in another saucepan.
If not using leftover meat, brown the meat with 1 T olive oil on medium. Add the greens when the meat is about half-cooked.
While the meat is cooking, prepare the orzo. In a skillet on medium heat, saute the garlic and onion in 2 T olive oil until the onion is translucent.
Reduce the heat. Add the orzo (or rice) and saute until it's lightly toasted, about 1 to 2 minutes.
Add the wine and stir, cook until it's almost evaporated. Now pour half of the stock into the skillet and cook until it's almost absorbed, stirring as needed. Next, pour half of the water into the skillet and cook until it's almost absorbed, stirring frequently. Finally, add the remaining stock and stir until it's absorbed. Check the pasta for doneness, and add more simmering water if and as needed. Total cooking time should be about 15-20 minutes.
Once the orzo and meat are both cooked, combine in one of the skillets. Add the cheese and stir thoroughly.
Serves 2-3.

Clear Creek Lavender

We'd never dealt with temperatures as low as we all endured around New Year's, and we put row covers over our plants to give them a few degrees of protection. When the cold snap broke and we removed the covers to have a look, the plants seemed fine. Lavenders should be hardy to around 5 to 0 degrees, so we were right there on the cusp. The row covers may enter into our winter routine.
All of this outside work has us reaching for the Lavender Shea Butter pretty often. Just a little dab warmed by your skin soaks in quickly on these dry days, and makes you smell like a couple hunderd thousand bucks, times being what they are. You'll like it. We're sure.
Also, Denise has a new lot of yarn. These colors were inspired by Oklahoma skies at dawn and dusk, and are laceweight merino. |

As new producers to the food coop, we would like to invite everyone to check out the excellent cuts of beef Whitmore Farms is offering for sale. Although we are new to the coop, we are not new to the cattle business. Wayne started his own herd of cattle 35 years ago and continues to improve the genetics of his herd. We have been selling halves of beef from our herd for several years and 2 years ago, began selling our beef by the cut. Our customers continue to come back for more, because of the exceptional flavor. One customer said, “There is just no comparison between your beef and the beef from the store.” as he bought another Whitmore Farms T-Bone steak.

A reminder that February is when Oklahoma gardeners get some of their early, cool-season veggies in the ground: cabbage, cauliflower, green peas, assorted greens & lettuces, etc.; root crops like onions, potatoes, radishes, & turnips. It's also time to finalize a strategy for warm-weather growing.
Don't have enough room to start your own transplants? No problem. Co-op vendors have a large assortment of plants ready-to-go at the correct time of year. Two of my favorites are Crestview Farms and High Tides & Green Fields. I know these producers personally and use their plants myself. Their offerings are either Certified Naturally Grown or Certified Organic, so be assured they're raised in a responsible, sustainable manner -- no chemicals or artificial stuff.
Crestview currently has an excellent selection of herbs, like chives, Greek oregano, lemon balm, rosemary, and (IMHO) one of the best spearmints around: 'Kentucky Colonel'. Also lettuce ready-to-transplant.
HT&GF is taking pre-orders from one the most extensive selections of pepper & tomato plants I've ever seen! Wide range of colors & taste differences. I'm a cherry tomato enthusiast & have used their plants in my personal garden. Plus, new this year: strawberry plants. Watch both of their home pages closely over the next few months to get your order in early.
The Oklahoma Garden Planner can help you develop a routine that works for you. This publication offers a lot of built-in flexibility & personalization. This month I'd like to show how the Appendix can help create a system designed BY you, FOR you. This section is reviewed & updated annually, so the material is as current as possible. We hope that those of you affected by the ice storm are able to have power restored quickly. We are expecting a significant amount of snow, but no ice. The cold weather will impact the cows' milk production. If we sell out of cream and butter early, please check back later to see if we've been able to add to the inventory.
Please check out our new size of Greek style yogurt (regular and lowfat). We are now offering a 32 oz. container (quart)--bigger size, better value. One of our teenage daughters, who doesn't like milk (how sad is that for a dairy farmer!) loves to eat the Greek style yogurt with granola. Our one year old (who loves milk) eats the Greek style yogurt with his fruit and cereal every day.
Our creamline and nonfat yogurt pints are available in multipacks at a discounted price. We're offering packages of grass fed beef liver and family packs of hamburger at a discount also.

The other day, John got home from the store and said that a man had come in that day and asked about the co-op after seeing the bookmarks we keep on the counter. He was excited to find out about the Co-op because he had just moved here and had been a part of something similar in his previous state. We hope this finds you warm, dry and safe after this week's winter blast. We appreciate the calls and emails from you all and thanks for keeping us in your thoughts and prayers. We are humbled by the trust that you and your home put in our products, and we are very passionate (sometimes maybe too much so) about bringing you not just local food, but CLEAN local food. It is our life’s love and we love to live it.
This month we have several new items to offer out of our kitchen. Our up and coming 17 year old chef has started to offer his Louisiana Line. It was planned to be featured at the annual meeting, but we all know what happened there. He is offering his Andouille Sausage and Chicken Gumbo. This soup is unlike any other you will ever put in your mouth, as it is made with our heritage stewing roosters, noted for their rich flavor and their ability to make the most delicious stock of all. It is made with as many Downing Family Farm products as we can, then as many Clean local items we can find. If you will notice on our entrees, our ingredients are source verified when purchased locally. In other words, it doesn’t just say flour, it says John Gosney’s flour; not just bacon, but DFF bacon. This way, you can refer to that producer’s bacon or flour, and see the actual ingredients in it. Of course all of the old standbys are there: whole wheat biscuits ready to bake and eat, delicious chicken and noodles made from our grass fed chicken, none of that nasty industrial stuff here.
We still have plenty of French Cou Nu chickens at a special price. These take a full 77-84 days to mature and were raised using the Label Rouge method adapted in France. Of course, legs, wings, breasts, and bones are still at an on-sale price. A full line of Black Angus Beef is in stock, as well as Pastured Pork. Of course all of Kathy’s and Eliza’s 6-700 hens are really producing the eggs in their winter greenhouses. It has become a full time job gathering, grading, washing, and packaging several hundred dozen eggs per month! But we are thrilled to be able to offer these to you all this time of year.

Anichini - Moore Ranch & Farm is continuing our sale prices until all of our stock of lamb and pork is entirely sold, hopefully this month! As soon as our freezers are emptied we will defrost and clean them in preparation for filling them up again with vaccuum packed pastured lamb, pork, and beef. The new vaccuumed packages will also include our logo beautifully designed by the Coop's own Sarah Naylor, a great designer/artist!
We can hardly wait for spring and warmer weather! Hope everyone had electricity during the recent storm! We have been busy the entire month of January! We've attended and spoken at two conferences and managed to catch some yucky bug, probably from the airplane ride full of coughing people? Since I'm not up to par, notes are shorter this month. Looking forward to the Annual Meeting and meeting everyone personally there!
If anyone has requests for a particular specialty crop, please let us know and we will try to grow it. We especially love crops with long storage lives since predicting crops for Coop Delivery Day is difficult for us. We are planning our spring, summer & fall crops now or soon as we feel better!
There is a great opportunity coming up this month for livestock producers or those thinking about becoming producers. A Low Stress Stockmanship School with Richard McConnell & Tina Williams will be held in Muskogee, OK, February 19-20, 2010. Hours are 2pm to 6pm on Friday & 9am to 5pm on Saturday. We have missed the ice storms out here on the prairie in north central Oklahoma. The snows have been beautiful and so far, we haven't had to cancel any retreats due to weather. Coming up in February and March are our raised bed gardening workshops and turnable composter workshops. You can come for half a day and build one or the other, or stay for the day and go home with both! (Assuming you have a way to get them in your vehicle.) Also, we'll be doing another Earth Dinner and a retreat on how to Live in the Moment. Also, Ann's going to teach the Top Ten Pain Releasers - things you can do yourself to feel better. Look for our retreats under Events and Classes.
If you haven't been to Turtle Rock Farm, we're an hour north of Edmond, just off Interstate 35. At our retreat center, we have gardens, chickens, bees, Alpacas and the beautiful prairie for you to explore.

This is the time of year when new crop coffees start coming in from the farms, and we have found 4 that we really love! In the next few months we'll begin to see the new crop from Central America as well--really looking forward to the Guatemalans, Costa Ricans, Mexicans and all the other new coffees, as they start coming in from a fresh new season!
Organic Sumatra Mandeling is back in stock with the spicy, earthy flavors and the heavy body of a traditional Sumatra!
Bali Organic Kintamani Natural Special Prep is a rich floral and fruited coffee with a syrupy body.
A lovely Ethiopian Organic Yergacheffe and a wonderful new Royal Select Water Decaf Sunda Island.
On another note we will soon be changing the name of our business from World Cup Coffee, due to a conflict with a similar name. I never worried too much about it in the past, but as we look towards an internet presence we must make some decisions. At this point for us it makes more sense to simply change our name, rather than to enter into a legal battle. So probably on the March order cycle we will begin the change to KAF Roasters.

Renricks Farm and Garden

Happy Valentines from Renricks Farm and Garden,
I know with all the ice and snow it seems like spring is far away. This month we have added lots of new wildflower seed that we harvested from our meadow acre. We also have added a new house plant, it is a dwarf monther-in-law tongue. It looks similiar to an agave but shorter at only 6" tall. I just divided our mother plants about two weeks ago and they are growing in 4" pots.
With all the cold weather, it is time to plan your gardens, flower and vegetable. With that, if you send me your email, I will email our complete list of everything we are growing for spring 2010. We have several new exciting knock out roses, hibiscus, perennials as well as lots of garden plants.
Look over our list of tomatos and peppers and let us know what you want us to grow. We will not be listing preorders on the coop, but will have the plants up on the coop in March. To help us decide on how much to grow of each variety, email us for the list and let us know which ones you want us to buy in March and April.

We are looking forward to the Chile Contest at the annual meeting. We will be providing a version of chile that uses white beans and roasted green chiles. After a little more research, it may even be vegan. This month we will continue our tuna casserole and Black eyed Pea-sole (a Santa Fe style good luck dish for the new year. At this rate, it may not hurt to eat some every week). We offer several Vegan and Vegetarian dishes and are happy to answer any production questions about our food that you may have. Included in our new listing are Vegan Refried Beans and Vegan Mexican Rice. We have had Vegan Tamales for some time that are a big hit in the coop.

Many thanks to those who have inquired about our safety and the well-being of our livestock during the cold, snow, and ice. We're pleased to report that we have faired very well, maintained electric power, and managed to distribute extra hay to all the cattle. Our thoughts and prayers go out to those in Oklahoma who have experienced extreme side-effects during extreme weather. The photo tells the story of a couple of guys who live in town as they ventured to our farm in the Jeep. John had used a dozer to clear a path and piled snow along the side of the road. These fellows decided to take a joy-ride over the pile - oops....they hung-up on high center. After reving the engine, wrapping a log chain around a tire, and spinning wheels the Jeep engine got hot. Pouring antifreeze in the radiator caused steam to erupt -- resembled a locomotive. Grandson said "kinda' like the Polar Exrpess."

Fluffy has gone off of the deep end of the swimming pool and took the plunge to quit her day job. That means, I make it as an artist or else! This month, I have over 60 new products listed. I will be introducing a few new whole grain products this coming year. I am also going to offer bread baking classes again in the very near future. Happy Winter everyone!
Here at Earth Elements Market & Bakery we've all been dealing with the winter weather, as have all of you! Fortunately there's lots of melting going on right now, so while it's kind of swampy in some places, still snowy in others, and we have to watch for falling icicles, at least we're not worrying about wild fires this week! If you're like all of us, you've been stuck at home a lot over the last couple of months, and hopefully you've been going through your stock of soup mixes, casseroles, lasagnas, and canned goods. If that's the case, we have plenty here that can refill your cabinets and freezers.
If you're longing for a taste of summer, we have Oklahoma Stir Fry, a tasty combination of diced Oklahoma Yellow Squash, diced Oklahoma Okra, shredded Onion, and chopped Bell Pepper, along with parsley and granulated garlic. This dish is great by itself, but is made even better by adding your own beef or chicken to the mix. You can find this listed under Food: Entrees: Vegan.
We also have several casseroles that give you the best of summer produce. Our Squash Casserole, made with Oklahoma Squash, Oklahoma tomatoes, our own whole wheat bread crumbs, Oklahoma cheddar, onions, Oklahoma butter, Parmesan, parsley, and black pepper makes a great side dish or a meal on its own. If you feel like you need some protein to complete your meal, you could also try our Hamburger Squash Casserole, with all the same ingredients plus some grass-fed Oklahoma hamburger. If you're a big fan of Okra, try our Okra Casserole, made with Oklahoma Okra, Oklahoma tomatoes, Oklahoma Cheddar, Bell peppers, and onion. All of these dishes come in both a 4x5 inch, two-person size, and a 6x8 4 person size. They can all be found under Food: Entrees: Casseroles.
We're still making all of our canned soups: Garlic Tomato Basil, Tomato Squash, and Tomato Zucchini, with great Oklahoma produce from local farmers. You can choose these in either a 16 oz. jar or a family sized 32 oz. jar. You can find both sizes under Food: Canned Foods: Soups. We also offer frozen 7 oz. cups of the Garlic Tomato Basil soup, as well as 7 oz. cups and 52 oz. bags of our Summer Harvest Soup in Foods: Entrees: Soups and Stews. All of these are super on their own, but pair beautifully with any of our Crackers or Breads, which you can find under Food: Bakery: Crackers or Food: Bakery: Breads.

The snowfall was beautiful and much needed as the pastures were getting quite dry around here. Of course, it makes for extra work. The cows can’t get to anything green because it’s all buried under 10" of snow, so they’re getting a lot of hay. Ron rolls the hay out on top of the snow and puts a hot fence in front of it. The cows reach under the wire to get to the hay. Cows are notoriously wasteful when it comes to hay—they’ll eat some of it, then lay in it, trample it and ruin it for feed. By setting it under the wire, they waste a lot less. Now, the baby calves have not learned to be afraid of the hot wire, so they slip under and camp out on the hay while their mothers eat. They don’t do any real damage to it, so we don’t mind.
We've added a bit more butter to the inventory, and hope to be able to again before the order closes--just depends on how the cows milk in this cold, damp weather! Also, we've added a 4 pack of our delicious curd style ricotta. Ricotta is sold frozen and keeps for several months--buy in bulk and save!

The February ordering window is about to close. Please check out Cattle Tracks beef specials, as there is still time to order and save! We have plenty of organic whole wheat flour (freshly milled); the package includes our favorite pancake recipe and makes scrumptious waffles, too. Wheat berries, for those of you who do your own grinding, are available in hard red and hard white. February has certainly been 'winter' in Oklahoma -- one good aspect about winter is cooking and baking, of which I've enjoyed immensely. Our newsletter will include interesting ideas about soup......yumm. I've got to close now ... want to get beef soup bones simmering and stew meat in the crock-pot ... we're having beef stew for lunch! |

Winter seems to be hanging on longer than we might like this year, so it's definitely time to restock your pantry and freezer with delicious, healthy, local food!
We have two products making a brief appearance this month, due to limited quantities. We found a few more bags of Oklahoma Blueberries stashed in the freezer, and want as many of you as possible to enjoy this wonderful, out-of-season taste treat. Frozen within hours of being picked, these are 45 oz. bags of amazing flavor. Get them while you can in Food: Fruits: Frozen Fruits.
